Anthotyro literally means "flowered cheese" and is one of the best known and most exquisite Greek cheeses. It is produced in Crete from goat and sheep's milk. It is rich in vitamins, such as vitamin D and A, as well as a great source of calcium and magnesium. Also, it is a light cheese and therefore suitable for a tasty and healthy Mediterranean diet, having a fat content of about 50%. This cheese is the first choice of everyone that wants to have a more healthy diet or even lose weight. You can add it to your salads, to sandwiches or even to pasta to make it creamy and delicious! Tip: to enjoy it at its best, try it simply by adding honey and cinnamon... and you will discover an irresistible dessert!

Anthotyro is a traditional fresh Greek whey cheese prepared from unpasteurized sheep’s and goat's milk or a mix of both. The name “flower cheese” likely derives from its floral aromas of wild herbs. This cheese has been produced for centuries in many regions like Thrace, Thessalia, the Peloponnese, the Ionian Islands, Epirus and Crete. The texture is crumbly and its taste deliciously tangy and salty.

There are two types of Anthotyro cheese: dry and fresh. Fresh is softer with a light, creamy taste that can be consumed raw or in sweet dishes. Dry Anthotyro has a harder and dry structure with a salty taste and a powerful smell. The dry variant is usually used in grated form over spaghetti.
