Skyros “Pitharisia” Graviera Reserve is one of Greece’s rarest island cheeses, a true expression of Skyros, made with a traditional craft that time has almost forgotten. Produced from a blend of sheep’s and goat’s milk from animals raised free-range on the island, it is aged for 12 months and then affined inside terracotta jars with layers of wild local thyme, developing a deep, herbal aroma and a rich, lingering finish.
The result is a cheese with a firm yet pleasantly brittle texture, unfolding notes of warm butter, toasted nuts, and Mediterranean herbs, with wild thyme bringing a distinctive, intense perfume. It’s an unmistakable “island reserve” graviera: bold, complex, and naturally elegant.
Crafted by the Mavrikos family dairy, rooted in Skyros tradition since 1920, this is a limited-production cheese made with strict hygiene and safety standards (HACCP) and a clean-ingredient philosophy: no preservatives, no artificial aromas, no unnecessary additives. Just milk, time, and the island’s wild herbs.
